Maple Whoopie Pies
¾ cup sugar (maple sugar is preferable)
6 Tbsp. butter, softened
1 egg, beaten
½ cup milk
½ cup pure maple syrup
1 tsp vanilla
2 ¼ cups flour
1 ¼ tsp baking powder
1 tsp salt
½ cup chopped nuts (optional)
Maple Cream filling (recipe follows)
Preheat oven to 375 degrees.
Combine sugar, butter and egg. Mix in milk, maple syrup and vanilla. Add flour, baking powder, salt and nuts. Drop by rounded tablespoon onto lightly greased baking sheet. Bake for about 12 minutes. Cool on a rack.
Make filling. Paste two cookies together with filling.
Maple Filling:
½ cup maple syrup
1-2 tsp maple extract
1 cup marshmallow fluff
2 cups confectioner’s sugar
1 ½ cups shortening
Mix together all ingredients for filling.
Yields about 16 whoopie pies depending upon size.
